Chalfont St Giles Local Market

Why not come along to Chalfont St Giles' local market on Saturday, September 17. Chalfont Classic Cuisine will be selling a range of  freshly produced pies, tarts and other dishes. All of our products are hand made in our Amersham kitchens using Free Range meats and eggs and locally sourced ingredients.

Leek Risotto

Why not try this simple but ever so tasty risotto. It makes the most of seasonal ingredients and produces a comforting light lunch or supper dish

 

Leeks

Ingredients

  • 2 medium leeks - sliced
  • 200g of risotto (arborio) rice
  • 175ml of dry white wine
  • 1lt of chicken stock (homemade is best)
  • handful of tarragon leaves
  • salt and ground black pepper
  • Parmesan cheese
  • Knob of butter

 

  1. Add the knob of butter to a large frying pan. Add the sliced leeks and the tarragon leaves and cook over a gentle heat until the leeks begin to soften - about 10 minutes.

  2. Stir in the rice and fry for about a minute until it appears slightly translucent. Next add the wine a let it cook through for a minute. Now add the chicken stock - a couple of ladles at a time - allowing the rice to absorb the liquid before you put the next one in.

  3. Continue cooking until the rice is creamy and plump but still has a little bite to it. Season with salt and freshly ground black pepper.

  4. Sprinkle with parmesan shavings and serve with a rocket salad.

You can always some pieces of cooked, smoked bacon to the dish to give it even more flavour.
